Our smoky Italian bean soup with pasta was created by Chef Deborah MacDonald Schneider, Certified Executive Chef of SOL Cocina. A warming and wonderful old world soup with beans, sundried tomatoes, pasta, bell peppers, and Mediterranean spices... it's naturally healthy and high in protein.


Recipe Requires:
2 Tbs. olive oil
2 tsp. salt (or to taste)
1 tsp. ground black pepper
1 small carrot, diced
1 small yellow onion, diced
1/2 stalk celery, diced
1/2 small green bell pepper, diced
4 cloves garlic, chopped
3 tsp. tomato paste
7 cups light, unsalted vegetable or chicken stalk

Optional Additions:
1 small red potato, unpeeled, diced
1 piece dry porcini mushroom (about 3 inches)
1 tsp. extra virgin olive oil
1 Tbs. freshly grated Parmesan cheese
